Almond Banana Pancakes

I've been working for the past two weeks to find a healthy and yummy substitute for the standard pancake. An almond banana recipe was recommended to me, but it was surprisingly challenging to find one that worked. My first trial and error ended up with batter that could have cemented buildings together, and my second refused to taste like anything other than a mouth full of dirt. BUT! I succeeded on my third. Here you have it, finally, a guilt free pancake recipe that doesn't taste like sh*t.
First things first, you're going to have to go to Trader Joes for a not too expensive ingredient spree.
INGREDIENTS:
1 tablespoon Coconut Flour (TJ's)
2 tablespoons Almond Butter (TJ's) can also use peanut butter, they'll just be peanutty
2 medium Bananas - mashed
2 large Eggs
Optional:
1/4 cup Nuts - chopped (whatever your heart desires... I used walnuts)
1 cup Blueberries (fresh and frozen work)
1/4 tsp Salt
Pinch Cinnamon
For pan:
1 tsp Coconut oil (TJ's) - or anything you have handy - butter, canola oil...
The recipe makes about 8 pancakes, depending on how you scoop them. And if you're eating for one, split everything in half. I did this, but added a little more flour to make it just about 3/4 tbsp. It turned out 4 beautiful cakes.
Now, this is the hard part. Put your pan on the stove and warm it up without oil at medium-high heat. Then...
- Grab a bowl.
- Smash banana(s) in it.
- Toss in eggs(s).
- Toss in Flour, Almond Butter, Nuts, Salt and Cinnamon.
Stir this all with the fork you smashed your banana with (to save dish time).
And BAM, you're all ready to fry em'.
Test the pan with a few drips of water to make sure it's ready, then add the tsp oil. Grab the blueberries to have them handy.
Scoop up batter and add to skillet. Toss a handful of blueberries on top of each.
They shouldn't take very long to fry up. Flip them over to hit the other side.
They're almost too easy. The hardest part for me was not adding bacon on the side. Instead, I had a delicious grapefruit, which helped offset the sweetness of the cakes.
mmm mmm! Serve these up to your honey and bypass those long brunch lines.
